Grilled Vegetables with Tofu

2-3 servings

Ingredients:

Sea Garden Spice Blend

1 bell pepper

1 box mushrooms

1 onion

1 block firm tofu

2 tomatoes

For the marinade:

2 tbsp sesame oil

4 tbsp soy sauce

2 tbsp mushroom oyster sauce (vegetarian, for stir-fries)

Salt and pepper to taste

Instructions:

  1. Prepare the tofu by cutting into cubes and boiling in generously salted water for 5 minutes. Drain and set aside for step 3. Osmosis will draw out excess water and prepare it to absorb marinade.

  2. Mix the marinade in a bowl: combine sesame oil, soy sauce, mushroom sauce, salt, and pepper.

  3. Chop the vegetables into large chunks. Thread them onto skewers, brush generously with the marinade, leave to absorb for 2 minutes. Place the skewers directly on a hot grill and cook for about 10 minutes, turning and glazing every 2–3 minutes until nicely charred and cooked through.

  4. For oven cooking, preheat the oven to 180°C using the grill or convection setting. Place the skewers on a baking tray and cook for about 15 minutes, brushing with marinade every 3–4 minutes until golden and cooked through.

  5. Sprinkle with Sea Garden Spice Blend to garnish before serving.
