Summer Salad

2-3 servings

Ingredients:

Harðfisk Furikake

½ mango, cubed

½ cucumber, cubed

30 g fresh cilantro, finely chopped

200g vermicelli noodles

1 lime

20–30 g cashews

Salt and pepper

Instructions:

  1. Preheat the oven to 180°C. Spread the cashew nuts on a tray and toast them in the oven until slightly browned, about 10–15 minutes.

  2. Bring a pot of salted water to a boil. Add the vermicelli noodles and cook according to package instructions. Once cooked, transfer the noodles to a bowl of cold water, then drain well.

  3. Squeeze the lime juice over the cubed mango and cucumber. Season with salt and pepper to taste.

  4. In a large bowl, mix together the noodles, mango, cucumber, cilantro, and toasted cashews.

  5. Top the salad with Harðfisk Furikake before serving.
