Miso-glazed Roasted pumpkin

4-6 servings

Ingredients:

Harðfisk Furikake

Sea Garden Spice Blend

1 kg butternut pumpkin

25g white or black sesame seeds

parsley/cilantro


Miso-lime glaze

zest of 1 lime

juice from 1/2 of a lime

4 tbsp olive oil

1.5 tablespoons miso

2-3 tablespoons of golden syrup

1 tablespoon sesame oil

1 tablespoon soy sauce/tamari

1 pinch of chili pepper

1 pinch of salt

Instructions:

  1. Preheat oven to 220 C and cover baking tray with parchment paper.

  2. Clean the pumpkin, cut in half and remove seeds, cut into 2cm wide wedges.

  3. Combine all ingredients for the glaze.

  4. Baste pumpkin wedges with glaze.

  5. Bake the pumpkin for 30 minutes, flip over the wedges half way.

  6. Toast sesame seeds.

  7. Sprinkle with Harðfisk Furikake/Sea Garden Spice Blend and parsley/cilantro before serving.
